A long time ago I watched a Semi-Homemade show where Sandra Lee made a really simple crostata. Actually, I remember thinking, "Hmmm... that's like a cheater crostata." Or as Matt calls it, a "pie pizza." Either way, it's ridiculously easy and yummy. And NOT helping my diet.
All you need is:
Refrigerated roll-up pie crust
A really yummy jam/jelly
Fresh fruit, your choice
Egg
Butter
Ricotta Cheese
Powdered Sugar
Roll out the pie crust (on parchment or wax paper) and smear a thin layer of jam around it. Be careful that it's a fairly thin layer, think dessert pizza. I had WAY too much jelly on this first try, it was way too 'full.' Then add little dollops of ricotta cheese in the middle.
Fold over the edges, brushing them with a little bit of butter and egg white. I cut up some grapes (since I used grape jam) and pressed them into the crust. Bake at 375 for 20 to 30 minutes depending on how crispy you prefer your desserts.

Afterward, let cool for a few minutes and then sprinkle with powdered sugar. Which I forgot to do in these pictures. Rats. I've made this a few more times and have a 'system' now that makes it a little more pulled-together looking. But either way, this makes a yummy dessert or a great breakfast pastry.

Yum!! Was it delicious?! It sure looks it. It also looks fun - like a kid would like it. Mmmm. I hate diets. They're evil.
I smile every time I read your diet posts. Mostly cause I'm there with you. I would like to lose ten pounds (maybe 15) too but my relationship with food is a deep one and you can't just turn the other cheek on vintage cheese. It isn't forgiving and what can really replace it? I have been trying to eat lots of seaweed and sauerkraut to fill my belly but that just leaves me hungry for fatty foods. Anyways...just another thing we have in common. I had friends visiting from the Bay Area this weekend and they actually went to the gym to take a zumba (?) dance class. Who goes on vacation and purposely wakes up early to exercise? I go on vacation to eat oh and of course to shop. I think I need a better balance. Your Crostata looks heavenly and since it is 6:53 am on the west coast I may have to call in and have a pizza delivered.
Wow, that looks awesome! I can't wait to try this!!
Liz,
Looks so yummy and exactly the type of thing I'd make as soon as my mind even conjured up the word DIET! I had fun reading some of your archives this weekend....you are a gifted writer.

Do you think it would work with Nutella instead of jam?

Sandra Lee rocks my world. One of the many people I miss seeing on a regular basis since we have no cable. *sigh* I got an awesome recipe for a pizza pie from her once. Which I'm sure is on both of our diets.
Well Liz, if that doesn't look just dandy and yummy! What a cute napkin and that picture belongs in a cookbook.

I'm weirdly not a fan of grapes, but I could really dig this with rasberries/rasberry jam! Must try soon!
Thanks as always for another great and simple idea!

Looks way better than the poptart I just had. Isn't that awful. I could imagine that with lots of different topping.Jackie
I won one of her cookbooks in a basket with other goodies at a benefit auction but I must confess I've never tried one of her recipes. Maybe I'll have to dig it out and give it another look. Have a happy week! Cat ^..^
whoa yummy.....
Looks so yummy I am going to try it for sure! Thanks for sharing.
Yum, I've never heard of this before, but again, YUM! It sounds so EASY. Actually, it sounds a bit too easy, as in it might be dangerous knowledge. To think I could be such a short path away from something delicious and sweet. ;-)
Thanks for sharing your Crostata recipe. I'll have to try that. Cute tea towel in the photo too.
Cathie
that looks really good!!
That's lovely. I'm going to have to make it...my little one is a grape freak and would probably devour the whole thing...if I didn't beat him to it.
